Ingredients 

Main Ingredients

  • 8 oz pasta
  • 1 cup cashews (soaked)
  • 1 cup vegetable broth
  • 2 tablespoon nutritional yeast
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup spinach (optional)

Instructions 

  1. Cook pasta according to package instructions.
  2. In a blender, combine soaked cashews, vegetable broth, nutritional yeast, garlic, lemon juice, salt, and pepper. Blend until smooth.
  3. In a pan, heat olive oil over medium heat. Add the blended sauce and cook for 5 minutes, stirring occasionally.
  4. Add cooked pasta to the pan and toss to coat. Add spinach if using and cook until wilted.
  5. Serve immediately.
