Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups tomatoes, chopped
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add chopped tomatoes and vegetable broth. Bring to a boil, then simmer for 20 minutes.
  5. Blend the soup until smooth using a blender.
  6. Return the soup to the pot, stir in heavy cream, and season with salt and pepper to taste. Heat through without boiling.
