Creamy Butternut Squash Pasta
A delicious, creamy pasta dish made with butternut squash.

Main Ingredients
- 1 medium Butternut Squash peeled and cubed
- 2 tablespoon Olive Oil
- 1 medium Onion chopped
- 3 cloves Garlic minced
- 1 cup Vegetable Broth
- ½ cup Heavy Cream
- ¼ cup Parmesan Cheese grated
- 12 oz Pasta any type
- to taste Salt and Pepper
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until softened.
3. Add butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender.
4. Transfer the mixture to a blender and blend until smooth.
5. Return the blended mixture to the pot. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
6. Add the cooked pasta to the sauce and toss to coat. Serve warm.
