Ingredients

  • 2 tablespoon Butter
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 16 oz Mushrooms, sliced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and minced garlic, and sauté until softened.
  3. 3. Add the sliced mushrooms and cook until they release their moisture and become tender.
  4. 4. Pour in the chicken broth and bring to a simmer. Let it cook for about 15 minutes.
  5. 5. Use a blender to puree the soup until smooth. Return the soup to the pot.
  6. 6. Stir in the heavy cream and season with salt and pepper to taste. Heat through but do not boil.
  7. 7. Serve hot and enjoy!
