Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1.5 cups vegetable broth
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add zucchini, bell pepper, and carrot. Cook until tender.
  4. In a separate pot, bring vegetable broth to a boil.
  5. Add couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff couscous with a fork and mix with the cooked vegetables.
  7. Season with salt and pepper. Garnish with fresh parsley if desired.
