Ingredients

  • 1 cup couscous uncooked
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 zucchini diced
  • 1 red bell pepper diced
  • 1 carrot diced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste

Instructions 

  1. 1. Bring 1 cup of water to a boil in a saucepan. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. 2. In a large mixing bowl, fluff the couscous with a fork.
  3. 3. In a separate pan, heat the olive oil over medium heat. Add the diced zucchini, red bell pepper, and carrot. Cook for about 5-7 minutes until tender.
  4. 4. Add the cooked vegetables to the couscous. Mix in the cherry tomatoes, salt, and black pepper. Stir well to combine.
  5. 5. Serve warm or at room temperature.
