Ingredients 

Main Ingredients

  • 4 red bell peppers tops cut off and seeds removed
  • 1 cup couscous
  • 1 cup vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup parsley chopped
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cook the couscous according to package instructions using vegetable broth instead of water.
  3. In a pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  4. Mix in cumin and paprika, cook for another minute.
  5. Combine cooked couscous, sautéed onion mixture, cherry tomatoes, and parsley in a bowl. Season with salt and pepper.
  6. Stuff the red bell peppers with the couscous mixture.
  7. Place stuffed peppers in a baking dish and bake for 25-30 minutes until peppers are tender.
