Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste

Instructions 

  1. 1. In a saucepan, bring 1 cup of water to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  2. 2. Fluff the couscous with a fork and transfer it to a large mixing bowl.
  3. 3. Add the cucumber, red bell pepper, red onion, and parsley to the couscous.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the couscous salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later.
