Instructions
In a large bowl, combine corn, zucchini, flour, Parmesan, egg, and green onions. Season with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Scoop 2-tablespoon mounds of batter into the skillet. Flatten slightly with a spatula.
Cook until golden brown and crisp, about 2-3 minutes per side.
Transfer to a paper towel-lined plate to drain. Serve warm.
