  • 1 cup corn kernels
  • 1 cup grated zucchini
  • 0.5 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 tablespoon chopped green onions
  • Salt and pepper to taste
  • Olive oil for frying

Instructions 

  1. In a large bowl, combine corn, zucchini, flour, Parmesan, egg, and green onions. Season with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Scoop 2-tablespoon mounds of batter into the skillet. Flatten slightly with a spatula.
  4. Cook until golden brown and crisp, about 2-3 minutes per side.
  5. Transfer to a paper towel-lined plate to drain. Serve warm.
