Ingredients 

Main Ingredients

  • 4 cups Corn kernels (fresh or frozen)
  • 1 cup Diced potatoes
  • 1 cup Diced onions
  • 2 cups Vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Chopped fresh parsley (optional)

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the diced onions and cook until translucent, about 5 minutes.
  3. 3. Stir in the diced potatoes and cook for another 5 minutes.
  4. 4. Add the corn kernels and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  5. 5. Stir in the heavy cream, salt, and black pepper. Simmer for another 5 minutes.
  6. 6. Serve hot, garnished with chopped fresh parsley if desired.
