Corn and Black Bean Quesadillas
Easy and delicious quesadillas filled with corn, black beans, and cheese.

Main Ingredients
- 1 cup Black beans rinsed and drained
- 1 cup Corn kernels fresh or frozen
- 1 cup Shredded cheese cheddar or Mexican blend
- 8 pieces Flour tortillas
- 1 tablespoon Olive oil
1. Heat a skillet over medium heat and add a bit of olive oil.
2. Place a tortilla in the skillet, sprinkle with cheese, black beans, and corn.
3. Top with another tortilla and cook until golden brown, then flip and cook the other side.
4. Repeat with remaining tortillas and filling.
5. Cut into wedges and serve warm.
