Cookie Dough
- 1 cup Butter softened
- 1 cup Brown Sugar packed
- ½ cup Granulated Sugar
- 2 teaspoon Vanilla Extract
- 2 cups All-Purpose Flour
- ½ teaspoon Salt
- 1 cup Chocolate Chips
Ice Cream
- 1 quart Vanilla Ice Cream softened
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Mix in the vanilla extract.
Gradually add the flour and salt, mixing until combined. Stir in the chocolate chips.
Drop tablespoon-sized balls of dough onto the prepared baking sheet. Flatten slightly with your hand.
Bake for 8-10 minutes, or until the edges are golden brown. Allow cookies to cool completely.
Once cookies are cool, place a scoop of softened ice cream between two cookies. Press gently to spread the ice cream to the edges.
Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
