Collard Wraps With Carrot Hummus

Ingredients 

Main Ingredients

  • 8 leaves Collard greens washed and stems removed
  • 2 cups Carrots peeled and chopped
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoons Tahini
  • 1 clove Garlic minced
  • 2 tablespoons Lemon juice freshly squeezed
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Steam the carrots until tender, about 10 minutes.
  2. 2. In a blender, combine the steamed carrots, chickpeas, tahini, garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
  3. 3. Lay out the collard green leaves. Spread a generous amount of carrot hummus on each leaf.
  4. 4. Roll up the leaves tightly, tucking in the sides as you go. Slice in half if desired.
  5. 5. Serve immediately or store in the fridge for up to 2 days.
