Main Ingredients
- 8 leaves Collard Greens large
- 1 cup Red Cabbage shredded
- 1 cup Carrots shredded
- 1 cup Red Bell Pepper thinly sliced
- 1 cup Cilantro chopped
- 1 cup Avocado sliced
- 1 cup Black Beans cooked
- 1 piece Lime juiced
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
1. Wash and dry the collard green leaves. Trim the thick part of the stems.
2. In a mixing bowl, combine shredded cabbage, carrots, bell pepper, and cilantro.
3. Add lime juice, olive oil, salt, and pepper to the bowl. Toss to coat the vegetables evenly.
4. Lay a collard green leaf flat and add a scoop of the vegetable mixture in the center.
5. Top with sliced avocado and black beans.
6. Fold the sides of the collard leaf over the filling and roll it up like a burrito.
7. Repeat with the remaining leaves and filling. Serve immediately.
