Ingredients 

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup coconut milk
  • 2 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • to taste salt and pepper

Instructions 

  1. 1. Heat the vegetable oil in a wok over medium-high heat.
  2. 2. Add the garlic and ginger, stir-fry for about 30 seconds until fragrant.
  3. 3. Add the shrimp and cook until pink, about 2-3 minutes.
  4. 4. Add the bell peppers and snap peas, stir-fry for another 2 minutes.
  5. 5. Pour in the coconut milk, soy sauce, lime juice, and sugar. Stir well to combine.
  6. 6. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  7. 7. Season with salt and pepper to taste. Serve hot.
