Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 can Coconut milk 13.5 oz
- 1 tablespoon Curry powder
- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Ginger, minced
- 1 teaspoon Salt or to taste
- 1 teaspoon Black pepper or to taste
- 1 tablespoon Lime juice
- 1 cup Cilantro, chopped for garnish
Heat the olive oil in a skillet over medium heat.
Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion is translucent.
Add the curry powder and cook for another minute.
Pour in the coconut milk and bring to a simmer.
Add the shrimp, salt, and black pepper. Cook until the shrimp are pink and cooked through, about 5-7 minutes.
Stir in the lime juice and garnish with chopped cilantro before serving.
