Ingredients 

Main Ingredients

  • 1 cup Jasmine rice
  • 1 cup Coconut milk
  • 1 cup Water
  • 1 cup Edamame, shelled
  • 2 cups Kale, chopped
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt

Instructions 

  1. 1. Rinse the jasmine rice under cold water until the water runs clear.
  2. 2. In a saucepan, combine the rice, coconut milk, water, and salt. Bring to a boil.
  3. 3. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  4. 4. In a separate pan, heat the olive oil over medium heat. Add the kale and edamame, and sauté for 5 minutes until the kale is wilted.
  5. 5. Fluff the rice with a fork and gently fold in the kale and edamame mixture.
  6. 6. Serve warm and enjoy!
