Main Ingredients
- 1 can Coconut milk full-fat
- 1 cup Heavy cream
- ½ cup Sugar
- 1 tablespoon Gelatin unflavored
- 1 teaspoon Vanilla extract
- 2 tablespoon Water cold
Sprinkle gelatin over cold water in a small bowl and let it sit for 5 minutes.
In a saucepan, combine coconut milk, heavy cream, and sugar. Heat over medium heat until sugar is dissolved, but do not boil.
Remove from heat and stir in the gelatin mixture until completely dissolved.
Add vanilla extract and mix well.
Pour the mixture into ramekins and refrigerate for at least 4 hours or until set.
Serve chilled, optionally with fresh fruit or a drizzle of honey.
