- 2 cups Coconut Milk
- 1 cup Heavy Cream
- 0.5 cup Sugar
- 1 teaspoon Vanilla Extract
- 0.5 cup Fresh Mint Leaves chopped
1. In a blender, combine coconut milk, heavy cream, sugar, and vanilla extract. Blend until smooth.
2. Add chopped mint leaves and blend briefly to mix.
3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
