  • 3 cups sweetened shredded coconut
  • cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
  3. In a separate bowl, beat the egg whites and salt until stiff peaks form.
  4. Gently fold the beaten egg whites into the coconut mixture until well combined.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake for 20 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
