Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup coconut milk
  • cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a mixing bowl, whisk together the flour, sugar, shredded coconut, baking powder, baking soda, and salt.
  3. In another bowl, mix the coconut milk, vegetable oil, vanilla extract, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
