Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 1.5 cups water
  • 1 cup coconut milk
  • 1 lime zested and juiced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup cilantro chopped
  • ¼ cup green onions sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, combine quinoa, water, and coconut milk. Bring to a boil.
  3. 3. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
  4. 4. Fluff quinoa with a fork and let it cool.
  5. 5. In a mixing bowl, whisk together lime zest, lime juice, olive oil, and salt.
  6. 6. Add cooled quinoa, cherry tomatoes, cucumber, cilantro, and green onions. Toss to combine.
  7. 7. Serve chilled or at room temperature.
