Cupcake Ingredients
- 1.5 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 0.5 cup unsalted butter, softened
- 2 large eggs
- 0.5 cup coconut milk
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Add the softened butter and mix until the mixture resembles coarse crumbs.
Beat in the eggs one at a time, then add the coconut milk, lime zest, and vanilla extract. Mix until just combined.
Divide the batter evenly among the cupcake liners, filling each about ⅔ full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
