Base
- 1 cup all-purpose flour
- ½ cup unsweetened shredded coconut
- ¼ cup sugar
- ½ cup butter, melted
Filling
- 1 cup sugar
- ¼ cup all-purpose flour
- 4 large eggs
- ½ cup lime juice
- 1 tablespoon lime zest
Preheat oven to 350°F (175°C). Grease a baking pan.
In a mixing bowl, combine flour, shredded coconut, and sugar for the base. Stir in melted butter until combined. Press mixture into the prepared baking pan.
Bake for 10-12 minutes, or until lightly golden. Remove from oven and set aside.
In another bowl, whisk together sugar and flour for the filling. Add eggs, lime juice, and lime zest. Mix until smooth.
Pour filling over the baked crust. Bake for an additional 20 minutes, or until the filling is set.
Let cool completely before cutting into bars. Enjoy!
