Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 4 cups vegetable broth
  • to taste salt
  • to taste black pepper
  • 1 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3. Add the minced garlic and ginger, and cook for another 2 minutes.
  4. 4. Stir in the turmeric, cumin, and coriander powders, and cook for 1 minute.
  5. 5. Add the red lentils, vegetable broth, and coconut milk. Bring to a boil.
  6. 6. Reduce the heat to low and simmer for 20-25 minutes, until the lentils are tender.
  7. 7. Season with salt and black pepper to taste. Serve hot.
