Ingredients

  • 1 cup red lentils rinsed
  • 1 can coconut milk full-fat
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 2 cups vegetable broth
  • 1 cup spinach fresh
  • 1 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and ginger. Sauté until onion is translucent.
  3. Stir in curry powder, turmeric, and cumin. Cook for another minute.
  4. Add rinsed lentils, coconut milk, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. Stir in fresh spinach and cook until wilted. Season with salt to taste.
  7. Serve hot with rice or naan.
