Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup shredded coconut
  • 0.5 cup powdered sugar
  • 0.5 cup unsalted butter, cold and cubed
  • 0.25 teaspoon salt

Filling

  • 14 oz sweetened condensed milk
  • 0.5 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, combine flour, coconut, powdered sugar, and salt. Pulse until mixed.
  3. Add cold butter and pulse until the mixture resembles coarse crumbs.
  4. Press the mixture into a tart pan. Bake for 15 minutes or until lightly golden.
  5. In a bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, egg yolks, and vanilla extract.
  6. Pour the filling into the baked crust and bake for another 15 minutes.
  7. Let cool completely before serving.
