- 1 cup pitted dates
- 1 cup shredded coconut
- 0.5 cup almonds
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
Blend dates, almonds, and coconut in a food processor until finely chopped.
Add coconut oil and vanilla extract, blend until mixture sticks together.
Roll mixture into small balls.
Roll balls in extra shredded coconut.
Chill in the fridge for 30 minutes before serving.
