Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 can coconut milk 14 oz
  • 4 cups vegetable broth
  • 1 sweet potato, diced
  • 1 red bell pepper, chopped
  • 1 cup chickpeas, cooked
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until softened.
  3. Stir in curry powder, turmeric, and cumin. Cook for 1 minute.
  4. Pour in coconut milk and vegetable broth. Bring to a simmer.
  5. Add sweet potato and bell pepper. Cook until tender.
  6. Stir in chickpeas. Season with salt and pepper.
  7. Serve hot, garnished with fresh cilantro.
