Instructions
Heat oil in a large pot over medium heat.
Add onion, garlic, and ginger. Sauté until softened.
Stir in curry powder, turmeric, and cumin. Cook for 1 minute.
Pour in coconut milk and vegetable broth. Bring to a simmer.
Add sweet potato and bell pepper. Cook until tender.
Stir in chickpeas. Season with salt and pepper.
Serve hot, garnished with fresh cilantro.
