Coconut Curry Chickpeas Spinach Recipe

Main Ingredients
- 1 tablespoon Olive Oil
- 1 medium Onion chopped
- 3 cloves Garlic minced
- 1 tablespoon Ginger grated
- 1 tablespoon Curry Powder
- 1 can Coconut Milk
- 1 can Chickpeas drained and rinsed
- 4 cups Spinach fresh
- to taste Salt
- to taste Black Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and grated ginger, cook for another 2 minutes.
Stir in curry powder and cook for 1 minute.
Add coconut milk and bring to a simmer.
Add chickpeas and spinach, cook until spinach is wilted, about 5 minutes.
Season with salt and black pepper to taste.
