Ingredients 

Main Ingredients

  • 1 lb Chicken breast, cut into bite-sized pieces
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Curry powder
  • 1 can Coconut milk
  • 1 cup Chicken broth
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 cup Bell peppers, sliced
  • 1 cup Carrots, sliced
  • 1 cup Green beans, trimmed
  • to taste Salt and pepper
  • for garnish Fresh cilantro, chopped

Instructions 

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic and ginger, and cook for another minute.
  3. Add the chicken pieces and cook until they are no longer pink.
  4. Stir in the curry powder and cook for another 2 minutes.
  5. Add the coconut milk, chicken broth, fish sauce, soy sauce, and brown sugar. Stir well to combine.
  6. Add the bell peppers, carrots, and green beans. Bring to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
  7. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
