Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 10 oz fresh spinach washed and chopped
  • 1 cup coconut milk
  • ¼ teaspoon nutmeg
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the chopped spinach and cook until wilted, about 3-4 minutes.
  5. Pour in the coconut milk and stir to combine.
  6. Season with nutmeg, salt, and pepper to taste. Simmer for another 5 minutes until the mixture thickens.
  7. Serve warm.
