Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 10 oz fresh spinach washed and chopped
- 1 cup coconut milk
- ¼ teaspoon nutmeg
- to taste salt and pepper
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the chopped spinach and cook until wilted, about 3-4 minutes.
Pour in the coconut milk and stir to combine.
Season with nutmeg, salt, and pepper to taste. Simmer for another 5 minutes until the mixture thickens.
Serve warm.
