Instructions
In a saucepan, combine coconut milk and sugar. Heat over medium heat until the sugar is dissolved.
In a small bowl, mix cornstarch with a little water to form a slurry. Add to the saucepan.
Continue to cook, stirring constantly, until the mixture thickens.
Remove from heat and stir in vanilla extract. Let cool before serving.
