Ingredients

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 can coconut milk
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 cup chicken broth
  • 1 bell pepper sliced
  • 1 cup spinach
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until the onion is soft.
  2. 2. Add the chicken pieces and cook until they are no longer pink.
  3. 3. Stir in the curry powder, turmeric, cumin, paprika, salt, and black pepper. Cook for another minute.
  4. 4. Pour in the coconut milk and chicken broth. Bring to a simmer and cook for 20 minutes.
  5. 5. Add the bell pepper and spinach. Cook for another 5 minutes.
  6. 6. Stir in the lime juice and garnish with fresh cilantro. Serve hot.
