  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.5 cup Butter, melted
  • 2 Large eggs
  • 1 cup Mashed bananas about 2-3 bananas
  • 1 teaspoon Vanilla extract
  • 0.5 cup Shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, mix the melted butter, eggs, mashed bananas, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed. Fold in the shredded coconut.
  5. Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
