Citrus Shrimp Avocado Salad

Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 2 Avocados, diced
- 1 cup Cherry tomatoes, halved
- ¼ cup Red onion, thinly sliced
- ¼ cup Cilantro, chopped
Dressing
- ¼ cup Olive oil
- 2 tablespoon Lime juice
- 1 tablespoon Honey
- 1 clove Garlic, minced
- to taste Salt and pepper
1. In a mixing bowl, whisk together olive oil, lime juice, honey, garlic, salt, and pepper to make the dressing.
2. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 2-3 minutes per side.
3. In a large bowl, combine the shrimp, avocados, cherry tomatoes, red onion, and cilantro.
4. Pour the dressing over the salad and toss gently to combine.
5. Serve immediately and enjoy!
