- 1 cup quinoa rinsed
- 2 cups water
- 4 cups kale chopped
- 1 cup orange segments
- ½ cup sliced almonds toasted
- ¼ cup feta cheese crumbled
Dressing
- ¼ cup olive oil
- ¼ cup orange juice freshly squeezed
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon honey
- 1 clove garlic minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
1. Cook the quinoa: In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
2. Prepare the dressing: In a small bowl, whisk together the olive oil, orange juice, lemon juice, honey, garlic, salt, and black pepper.
3. Assemble the salad: In a large mixing bowl, combine the cooked quinoa, kale, orange segments, sliced almonds, and feta cheese. Pour the dressing over the salad and toss to combine.
4. Serve: Serve immediately or refrigerate for up to 2 days.
