Salad Ingredients
- 4 cups Kale chopped
- 2 Avocados sliced
- 1 Orange peeled and segmented
- ¼ cup Red Onion thinly sliced
Dressing Ingredients
- ¼ cup Olive Oil
- 2 tablespoon Lemon Juice freshly squeezed
- 1 tablespoon Honey
- 1 teaspoon Dijon Mustard
- to taste Salt and Pepper
1. In a large mixing bowl, combine the chopped kale, sliced avocados, orange segments, and thinly sliced red onion.
2. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to make the dressing.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately and enjoy!
