  • 1 lb chorizo sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 large flour tortillas
  • 1 cup shredded cheese
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • Salsa, for serving
  • Sour cream, for serving

Instructions 

  1. Cook chorizo in a skillet over medium heat until browned.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Warm tortillas in a dry skillet or microwave.
  4. Fill tortillas with chorizo mixture, cheese, rice, beans, and avocado.
  5. Roll up burritos and serve with salsa and sour cream.
