Ingredients 

Main Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • ½ cup unsweetened cocoa powder
  • 4 oz semi-sweet chocolate, chopped
  • 1 teaspoon vanilla extract
  • 4 large egg yolks

Instructions 

  1. In a saucepan, combine the heavy cream, whole milk, sugar, and cocoa powder. Heat over medium heat until the mixture is hot but not boiling.
  2. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks, whisking constantly.
  3. Return the egg mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and stir in the chopped chocolate and vanilla extract until smooth.
  5. Pour the mixture into a bowl and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
  6. Churn the mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
