Chocolate Cupcakes With Avocado Icing

Cupcakes
- 1 cup all-purpose flour
- 1 cup sugar
- ½ cup cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk
Avocado Icing
- 2 ripe avocados
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add vegetable oil, eggs, vanilla extract, and buttermilk. Mix until smooth.
Fill cupcake liners ⅔ full with batter.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool.
For the icing, mash avocados until smooth. Add powdered sugar and vanilla extract. Mix until creamy.
Frost cooled cupcakes with avocado icing.
