- 1 cup butter softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup carrots grated
- 1 cup chocolate chips
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture and mix well.
Stir in the grated carrots and chocolate chips.
Drop by rounded tablespoonfuls onto the prepared baking sheet.
Bake for 10-12 minutes or until golden brown. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
