Ingredients 

Main Ingredients

  • 2 cups Cooked Rice
  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 cup Salsa
  • 1 cup Shredded Cheese
  • 1 cup Lettuce chopped
  • 1 tablespoon Olive Oil
  • 2 tablespoon Chipotle Sauce

Instructions 

  1. 1. Cook the rice according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through.
  3. 3. Add chipotle sauce to the chicken and stir well. Cook for another 2-3 minutes.
  4. 4. In a bowl, layer rice, black beans, corn, salsa, cheese, and lettuce. Top with chipotle chicken.
  5. 5. Serve immediately and enjoy!
