Main Ingredients
- 2 cups Cooked Rice
- 1 lb Chicken Breast cut into bite-sized pieces
- 1 can Black Beans drained and rinsed
- 1 cup Corn frozen or fresh
- 1 cup Salsa
- 1 cup Shredded Cheese
- 1 cup Lettuce chopped
- 1 tablespoon Olive Oil
- 2 tablespoon Chipotle Sauce
1. Cook the rice according to package instructions.
2. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through.
3. Add chipotle sauce to the chicken and stir well. Cook for another 2-3 minutes.
4. In a bowl, layer rice, black beans, corn, salsa, cheese, and lettuce. Top with chipotle chicken.
5. Serve immediately and enjoy!
