Chipotle Cauliflower Nachos
Spicy, cheesy, and healthy nachos made with roasted cauliflower and chipotle seasoning.

Main Ingredients
- 1 head Cauliflower cut into florets
- 2 tablespoon Olive oil
- 1 teaspoon Chipotle powder
- 1 cup Shredded cheese cheddar or Mexican blend
- 1 cup Black beans cooked
- 1 cup Corn kernels cooked
- 1 cup Salsa
- 1 cup Guacamole
- 1 cup Sour cream
- 1 handful Cilantro chopped
Preheat oven to 425°F (220°C).
In a mixing bowl, toss cauliflower florets with olive oil and chipotle powder.
Spread cauliflower on a baking sheet and roast for 20-25 minutes until tender and slightly crispy.
Remove cauliflower from oven and top with shredded cheese, black beans, and corn. Return to oven for 5 minutes until cheese is melted.
Remove from oven and top with salsa, guacamole, sour cream, and cilantro. Serve immediately.
