- 1 can black beans drained and rinsed
- 1 cup corn kernels fresh, frozen, or canned
- 1 red bell pepper diced
- 0.25 cup red onion finely chopped
- 0.25 cup cilantro chopped
- 1-2 chipotle peppers in adobo sauce minced
- 1 lime juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
Add minced chipotle peppers, lime juice, and olive oil. Toss to combine.
Season with salt and pepper to taste.
Serve immediately or refrigerate for later.
