Chipotle Apple Sweet Potato Salad

Main Ingredients
- 2 large Sweet potatoes peeled and cubed
- 1 large Apple diced
- 1 can Chipotle peppers in adobo sauce chopped
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Preheat your oven to 400°F (200°C).
Place the cubed sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
In a large mixing bowl, combine the roasted sweet potatoes, diced apple, and chopped chipotle peppers.
Toss everything together until well mixed. Serve warm or at room temperature.
