  • 2 large Sweet potatoes peeled and cubed
  • 1 large Apple diced
  • 1 can Chipotle peppers in adobo sauce chopped
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cubed sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  3. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
  4. In a large mixing bowl, combine the roasted sweet potatoes, diced apple, and chopped chipotle peppers.
  5. Toss everything together until well mixed. Serve warm or at room temperature.
