Main Ingredients
- 2 large cucumbers peeled, seeded, and chopped
- 1 cup plain yogurt
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 tablespoon dill chopped
- to taste salt
- to taste black pepper freshly ground
1. In a blender, combine cucumbers, yogurt, garlic, olive oil, lemon juice, and dill. Blend until smooth.
2. Season with salt and black pepper to taste.
3. Chill in the refrigerator for at least 1 hour before serving.
4. Serve cold, garnished with additional dill if desired.
