Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 0.5 cup snap peas
  • 0.25 cup soy sauce
  • 1 tablespoon chili paste
  • 1 tablespoon orange juice
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water. In a pot, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
  2. In a large pan, heat olive oil over medium heat. Add bell peppers, zucchini, broccoli, and snap peas. Cook for 5-7 minutes until tender.
  3. In a small bowl, mix soy sauce, chili paste, orange juice, ginger, and garlic.
  4. Add the sauce to the vegetables and cook for another 2-3 minutes.
  5. Fluff the quinoa with a fork and divide into bowls. Top with the vegetable mixture. Season with salt and pepper.
