Ingredients 

Main Ingredients

  • 1 large Zucchini cut into chunks
  • 1 large Red bell pepper cut into chunks
  • 1 large Yellow bell pepper cut into chunks
  • 1 cup Cherry tomatoes
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 lime Juice of lime
  • 1 tablespoon Fresh cilantro chopped

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a large bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  3. 3. Add zucchini, bell peppers, and cherry tomatoes to the bowl and toss to coat.
  4. 4. Thread the vegetables onto skewers.
  5. 5. Grill the skewers for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. 6. Remove from the grill and drizzle with lime juice. Sprinkle with chopped cilantro before serving.
