Chickpea Sweet Potato Stew

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 large sweet potato, peeled and diced
- 1 can chickpeas, drained and rinsed (15 oz)
- 4 cups vegetable broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
- 1 cup kale, chopped
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, cumin, coriander, and paprika. Cook for another minute.
Add diced sweet potato, chickpeas, vegetable broth, and diced tomatoes. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
Season with salt and pepper to taste. Stir in chopped kale and cook for another 5 minutes.
Serve hot and enjoy!
