Chickpea Sweet Potato Stew

Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 large sweet potato, peeled and diced
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup kale, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, cumin, coriander, and paprika. Cook for another minute.
  4. Add diced sweet potato, chickpeas, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
  6. Season with salt and pepper to taste. Stir in chopped kale and cook for another 5 minutes.
  7. Serve hot and enjoy!
